Being vegan, I know it can be really stressful to order food from places that are not vegan, and it’s the same when you are gluten free or have gluten free guests.
Here are the processes we have in place when making our gluten free wedding cakes:
Gluten free cakes are never baked on the same day as non gluten free cakes
Everything we use when baking gluten free is rewashed prior to use, and surfaces are cleaned and disinfected twice before starting
We keep our gluten free flour and wheat flour in different corners of the studio
We have a shelf dedicated to gluten containing products and all other shelves are for gluten free products
We also have a dedicated gluten free fridge and freezer
Everything is thoroughly cleaned and all surfaces are disinfected daily
Cloths are also washed and replaced daily at a minimum
GLUTEN FREE WEDDING CAKES
One thing I ask my couples is to consider whether it’s mandatory for their whole wedding cake to be gluten free. It absolutely can be done, but because of the nature of gluten free flour, GF cakes tend to dry out more quickly than others. This means our gluten free cakes have to be made as close as possible to the wedding, which means we’re a little more restricted in terms of design, as there is less time to decorate.
If you don't necessarily require the whole cake to be gluten free, but you want to have a gluten free cake cutting, I recommend having the top tier gluten free (as it will be covered in fondant and will have a board underneath - it will not be in contact with any of the rest of the cake), and a gluten free cutting cake in the kitchen. Or, if you don’t need any gluten free cake for your cake cutting moment, just the gluten free cake in the kitchen.

Are gluten free wedding cakes more expensive?
We don’t charge more for gluten free cakes than we do for cakes with wheat flour, because I don’t think your health should dictate your ability to have a beautiful cake for your wedding.
If you and/or your partner are gluten free, we can make your whole cake gluten free if you wish. If you simply have a few gluten free guests at your event, we can make them a special cake on the side with no surcharge so they can still enjoy dessert.
Do gluten free cakes taste different?
They do have a different taste to our non gluten free cakes because we use different recipes. Gluten free baking is not just a question of taking any recipe and replacing the wheat flour with gluten free flour! Unfortunately, it doesn’t work that way. Gluten free flour, because of its chemical components, produces cakes that are a lot flakier and drier if you don’t adapt the whole recipe to accommodate for it – which is something we do. I promise you and your guests won’t be able to tell your cake is gluten free - in fact, my customers often have a moment of panic during consultations because they think I have forgotten the gluten free requirement. That’s how good our gluten free cakes are!
Can I guarantee the cakes are gluten free?
While we do our absolute best to make sure contamination risks are at their lowest, some of the ingredients we use are gluten free, but still have the “may contain traces of gluten” mention. Because of this, we cannot guarantee that gluten free cakes will be 100% free of traces of gluten.
